Chia Seed Pudding.



This is one of my favorite snacks.
Chia seeds are proclaimed as a power food, they´re tiny black seeds that gel up when soaked in liquid.
Compared to making a tapioca pudding this is way more healthy (not all the starch!).
And SO easy.
Whip it up the night before you plan on eating it, it also keeps for a couple of days in the fridge. 
Eat it cold, it it hot, use dairy, go vegan.
I spiced mine up with vanilla, honey and garnished it with fresh passionfruit, coconut chips and pistachios. 
Nomnomnom.

Chia Seed Pudding

time 10 minutes preparation, overnight chilling, 5 minutes finishing
yields two snacking bowls

250ml milk (dairy or non-dairy, e.g. almond milk)
22g chia seeds
empty, scraped vanilla bean
25g sugar (great alternatives: honey, maple syrup, brown rice syrup)

Mix milk and chia seeds with a whisk. 
Add the vanilla bean and sugar. 
Wait for a couple of minutes, give it another good stir, then fill into an airtight container and let stand overnight in the fridge.
Serve cold or warmed up on the stovetop or in the microwave.
Garnish with whatever you fancy.


Das ist einer meiner Lieblingssnacks.
Chia seeds werde als ´Power Food´ gehandhabt, sie sind kleine schwarze Samen die in Flüssigkeit gelieren. 
Im Vergleich zu Tapioka Pudding ist das auf jeden Fall eine gesündere Alternative (nicht so viel Stärke!).
Und es ist SO einfach.
Am Vorabend kann man es sich auf der schnelle zubereiten, aber es hält sich auch ohne Probleme mehrere Tage im Kühlschrank.
Iss es kalt, iss es heiss, benutze Milchprodukte oder mach´s vegan.
Ich hab mein Basisrezept mit Vanille und Honig aufgepeppt und habe es dann mit frischer Passionsfrucht, Kokoschkas und Pistazien garniert.

Chia Saat Pudding

Zeit 10 Minuten Vorbereitung, Übernacht ziehen lassen, 5 Minuten Fertigstellung
Ergibt Zwei kleine Snack Schüsselchen

250ml Milch (Molkeprodukt oder pflanzlich, z.B. Mandelmilch)
22g Chia Samen
leere, ausgekratzte Vanilleschote
25g Zucker (tolle Alternativen: Honig, Ahornsirup, brauner Reissirup)

Mische die Milch und die Chia Samen mit einem Schneebesen.
Füge die Vanille und den Zucker hinzu.
Warte ein paar Minuten, rühre nochmal gut um und fülle alles daraufhin ein einen luftdichten Behälter und lass den Pudding im Kühlschrank Übernacht ziehen.
Serviere kalt oder aufgewärmt. entweder auf dem Herd oder der Mikrowelle.
Serviere mit deinen Wunschzutaten.

Gardening.

 
 
 
 

My Mama's always been in to gardening, and still is.
As a kid I found it fun to dig around for potatoes or eat a plum directly off a tree, actually getting down and dirty didn't appeal to me though, especially in my teen years.
This all changed when I lived in Portland though.
Before that, I also had a small herb garden, but never thought I could grow my own produce.
In Portland, everyone and their dog (or goat, or chicken) seemed to have a garden. 
Tomatoes, squash, berries, loads of different fruit trees. 
I loved it. 
So when I moved to Munich and got to live in a house with a garden I started toying with the idea to plant and cultivate my own veggies, fruits and herbs.
We actually have already got two plum trees, an apple tree and loads of blackberries.
My additions will include kale, rocket, sweet potatoes, red currants, rhubarb and a whole long list of other veggies and especially herbs.
I'll keep you guys updated with the progress of this project. 

I can't wait to bake with my own garden's offering: how does blackberry pie, apple crumble, rhubarb meringue, tomato tart, kale salad and and and… sound?


Meine Mutter war schon immer Garten-affin, und ist es immernoch.
Als Kind fand ich's grossartig nach Kartoffeln zu graben oder eine Pflaume direkt vom Baum zu essen, aber sich richtig dreckig zu machen hat mich nicht gereizt, besonders nicht als Teenager.
Das hat sich aber alles geändert als ich letztes Jahr nach Portland gegangen bin.
In Portland hatte gefühlt jeder Mensch (gern mit tierischem Anhang, sei´s Hund, Huhn oder Ziege) einen Garten.
Ich hab´s geliebt.
Und als ich dann nach München gezogen bin und in einem Haus mit Garten unterkam, habe ich angefangen mit der Idee zu spielen meinen eigenen Garten anzubauen und zu kultivieren, mit Gemüse, Obst und Kräutern.
Wir haben sogar schon zwei Pflaumenbäume, einen Apfelbaum und viele Brombeersträucher.
Mein Beitrag wird noch Grünkohl, Rucula, Süßkartoffeln, rote Johannisbeeren, Rhabarber und eine lange Liste weiterer Gemüsesorten und Kräuter umfassen.
Ich werde euch auf jeden Fall mit diesem Projekt am Laufenden halten!

Ich kann´s kaum erwarten mit dem zu backen was der Garten dann zu bieten hat: wie hört sich den Brombeer Pie, Apfel Streusel, Rhabarber Baiser, Tomaten Tart, Grünkohl Salat und und und… an?

Rhubarb Crumble Tart.

 
 
 

It's officially spring!
I know that becaaaaause you get strawberries and rhubarb.
My favorite combination at this time of year.
And to spice it up: a big gulp of whiskey. 
This one, 'Royal Lochnagar' Single Malt, aged 12 years, was kindly donated by Alexander & James.

Rhubarb Crumble Tart

time preparation around one hour, chilling an additional hour, baking time 15 plus 25 minutes
yields around fourteen to sixteen 10cm tarts

pâte sucrée d'amande:

70g butter
38g powdered sugar
25g ground almonds
1/8 tsp salt
1/8 tsp vanilla
25g eggs
120g all-purpose flour

filling:
250g strawberries, blended
30ml whiskey
150ml rhubarb schorle
1/4 vanilla bean
zest of 1/2 lemon
juice of one lemon
1/8 tsp. ginger
dash of salt
250g sugar
65g cornstarch
50ml white wine
630g rhubarb, chopped into chunks
250g fresh strawberries, diced

crumble:
150g butter
150g sugar
20g egg yolks
1/8 vanilla bean
dash of freshly ground nutmeg
dash of freshly ground tonka bean
dash of cinnamon
1/2 tsp. himalayan salt
245g flour

Make pâte brisée: 
cream butter, sugar, eggs, vanilla and salt.
Add flour and almonds, blend well.
Chill for at least 1 hour before rolling it out.

In the meantime prepare the filling:
mix the strawberries with the whiskey, rhubarb schorle, vanilla, lemon, ginger, salt and sugar in a high saucepan and heat.
Mix the cornstarch with the wine.
Once the mixture boils, add the cornstarch mix, stirring constantly. 
Then add the rhubarb and let simmer for a couple of minutes.
Remove from heat and add the strawberries.
Leave to cool a bit until the tarts and crumble are ready.

Make the crumble:
cream the butter with the sugar. 
Add the egg yolks and spices. 
Mix in the flour until you have a crumble texture that sticks together for the most part.
Refrigerate until needed.

Bake the tarts:
 roll the dough around 3-4mm thick, cut out in circles, a few cm larger than the rim of your forms, then press into your tartelette forms.
Poke the bottoms with a fork, to avoid air bubbles.
Bake for around 15 minutes, or until golden-brown at 180 degrees Celsius.
Remove from the oven, fill with the rhubarb filling, then break the crumble into large pieces over the tarts.
Bake for 20-25 minutes until the crumble is golden in color. 
Serve warm or at room temperature.

Rhabarber Streusel Tarte

Zeit Vorbereitung ca. wine Stunde, eine weitere Stunde Kühlen, Backzeit beträgt 15 Minuten plus weitere 25 Minuten
Ergibt ca. vierzehn bis sechzehn 10cm Tartes

pâte sucrée d'amande:

70g Butter
38g Puderzucker
25g gemahlene Mandeln 
1/8 Teelöffel Salz
1/8 Teelöffel Vanille
25g Eier
120g Mehl Typ 405

Füllung:
250g Erdbeeren, püriert
30ml Whiskey
150ml Rhabarber Schorle
1/4 Vanilleschote
Zeste einer halben Zitrone
Saft einer Zitrone
1/8 Teelöffel Ingwer
Prise Salz
250g Zucker
65g Weizenstärke
50ml Weisswein 
630g Rhabarber, in grobe Stücke geschnitten
250g frische Erdbeeren, klein gewürfelt

Streusel:
150g Butter
150g Zucker
20g Eigelb
1/8 Vanilleschote
Prise frisch gemahlene Muskatnuss
Prise frisch gemahlene Tonkabohne
Prise Zimt 
1/2 Teelöffel Himalaya Salz
245g Mehl

Bereite das pâte brisée vor:
mische Butter, Zucker, Eier, Vanille und Salz.
Füge Mehl und Mandeln hinzu und verknete alles gut.
Stelle den Teig vor dem Ausrollen mindestens eine Stunde kühl.

Richte in der Zwischenzeit für die Füllung her:
mische Erdbeeren mit dem Whiskey, Rhabarber Schorle, Vanille, Zitrone, Ingwer, Salz und Zucker in einen Topf und erhitze alles.
Verrühre die Stärke mit dem Wein gut.
Wenn die Erdbeermischung kocht, füge die Stärkemischung unter ständigem Rühren hinzu.
Mische den Rhabarber ein und lass alles ein paar Minuten köcheln.
Entferne den Topf von der Herdplatte und mische die Erdbeeren unter.
Lasse die Füllung kühlen bis die Tartes und die Streusel fertig sind.

Mache die Streusel:
mische die Butter mit dem Zucker.
Füge das Eigelb und die Gewürze hinzu.
Knete das Mehl ein bis eine krümlige Textur erreicht ist, der Teig jedoch zum Grossteil zusammen pappt.
Stelle die Streusel bis zum Gebrauch kühl.

Backe die Tartes:
rolle den Teig in 3-4mm Dicke aus, schneide oder steche Kreise aus, die ein paar cm weiter sind als deine Förmchen, drücke sie vorsichtig in deine Formen.
Punktiere die Böden mit einer Gabel um Luftblasen zu vermeiden.
Backe für ca. 15 Minuten bei 180 Grad Celsius, oder bis sie gebräunt sind.
Entferne sie aus dem Ofen, fülle sie mit der Rhabarbermischung, breche daraufhin die Streusel in grosse Stücke und belege die Tartes. 
Backe für weitere 20-25 Minuten oder bis der Streusel goldbraun ist.
Serviere sie warm oder bei Raumtemperatur.

Healthy Cookies.


Okay, so these are 'healthy', vegan, gluten-free (if made with gluten-free oats) cookies.

I got this awesome coconut oil from 'DeliCoco' a couple of weeks ago to test.
I really got into coconut oil for cooking and baking last year so I was psyched to take up the offer from Benedikt. 
He started his own company and now imports coconut oil directly from the Philippines, a country he used to live and travel in.

These cookies are a great example for using coconut oil to better your nutrition.
Apart from it it includes banana and unrefined sugar as sweetener and nuts and oats AND dark chocolate. 
So all the good stuff.

Healthy Cookies

time 20 minutes preparation, plus one hour chilling, plus 30 minutes baking
yields around 25 cookies

3 medium, ripe bananas, well mashed
1 tsp. vanilla extract
60g coconut oil, barely warm - so it isn't solid
50g brown sugar
170g rolled oats
 65g almond meal
30g coconut, finely shredded & unsweetened
1/2 tsp. cinnamon
1/2 tsp. fine grain sea salt
1 tsp. baking powder
100g dark chocolate (70% or higher), chopped roughly

In a large bowl combine the bananas, vanilla extract, and coconut oil. 
Set aside.
In another bowl whisk together the brown sugar, oats, almond meal, shredded coconut, cinnamon, salt, and baking powder.
Add the dry ingredients to the wet ingredients and stir until combined.
Fold in the chocolate chunks/chips.
Chill for at least an hour.
Preheat oven to 175 degrees Celsius.
Drop dollops of the dough, each about 2 teaspoons in size, an inch apart, onto a parchment (or Silpat) lined baking sheet.
Bake for 12 - 15 minutes.



Okay, das sind also 'gesunde', vegane, Gluten-freie (wenn man sie mit Gluten-freien Haferflocken macht) Kekse.

Gesunde Kekse

Zeit 20 Minuten Vorbereitungszeit, plus eine Stunde Kühlung, plus 30 Minuten Backzeit
Ergibt ca. 25 Kekse

3 mittlgrosse, reife Bananen (zerdrückt)
1 Teelöffel Vanilleextrakt
60g Kokosnussöl, aufgelöst aber kaum warm
50g brauner Zucker
170g zarte Haferflocken
 65g Mandelmehl/-griess
30g Kokosraspeln
1/2 Teelöffel Zimt
1/2 Teelöffel feinkörniges Meersalz
1 Teelöffel Backpulver
100g dunkle Schokolade (mind. 70%), grob gehackt

Mische Bananen, Vanille und Kokosöl in einer grossen Schüssel.
Stelle sie beiseite.
In einer weiteren Schüssel, kombiniere braunen Zucker, Haferflocken, Mandelmehl, Kokosraspeln, Zimt und Backpulver.
Füge die Trockenzutaten zu den anderen hinzu und rühre sie zusammen.
Mische die Schokoladenstücke unter.
Stelle den Teig für mindestens eine Stunde kühl.
Heize den Ofen auf 175 Grad Celsius vor.
Lasse Löffelweise (ca. 2 Teelöffel gross) den Teig mit etwas Abstand auf ein mit Backpapier oder Silpat ausgelegtes Blech fallen. 
Backe für 13-15 Minuten.

Book review and Gluten-free Berry Almond Cake.


A couple of weeks ago I got these cool cookbooks from the 'Dorling Kindersley' publishing group.
Since I'm working on being more healthy and conscious about what I put into my body, the books 'Power Food' and 'Raw Food!' are just perfect.

'Raw Food!' divides it's recipes into different categories.
One is dedicated to snacks, the others to meals, spreads, desserts and drinks.
So all kinds of goodies!
Obviously it's a trend at the moment, but I definitely put it off as a positive one. 
The photography is beautiful and appetizing and most recipes simple enough to make without too many hard-to-find ingredients.
I'm really looking forward to making some of the food.

'Power Food' has a great collection of ingredients at the start, all kinds of fruits, veggies, nuts and grains, and what positive attributes they have for your health and nutrition.
Then it also includes a compilation of meals for a day, which I find super helpful.
And because of my sweet tooth, I was especially happy about the sweets and desserts section. 
So I decided to go try the gluten-free berry almond cake.
Very good decision. 
It's moist and fruity, full of flavor.

Fyi, I can definitely recommend this recipe and also both books.
They feature all kinds of different recipes that inspire. 
They're at a level that's easy enough to make, even after a long day at work. 
I will definitely try out more in the future!


Gluten-free Berry Almond Cake

time 20 minutes preparation plus 30 minutes baking time
yields one 24 cm cake

150g butter
150g sugar
3 eggs, separated
150g almond meal
1 tsp. vanilla extract
lemon zest to taste
1/4 tsp. himalayan salt
150g mixed berries

Preheat oven to 175 degrees Celsius.
Cream butter and sugar.
Add the egg yolks one by one, mixing after each addition. 
Mix in the almond meal, vanilla and lemon.
Beat the egg whites with the salt and fold under the almond mixture.
Spread half of the batter into your baking form.
Sprinkle with the berries, then add the rest of the batter.
Bake for around 30 minutes, or until an inserted toothpick comes out clean and the surface is browned.



Vor ein paar Wochen habe ich diese zwei coolen Kochbücher vom 'Dorling Kindersley' Verlag bekommen.
Da ich daran arbeite gesünder zu leben und mir bewusster zu werden was ich meinem Körper zuführe, sind die Bücher 'Power Food' und 'Raw Food!' perfekt.

'Raw Food!' teilt seine Rezepte in verschiedene Kategorien ein.
Eine ist Snacks gewidmet, die Nächste Mahlzeiten, Aufstriche, Desserts und Drinks.
Also alle möglichen Leckereien!
Natürlich ist es gerade Trend, aber meiner Meinung nach definitiv ein positiver. 
Die Fotografie ist wunderschön und appetitanregend, und die meisten Rezepte sind simple genug um sie auch ohne schwer zu findende Zutaten umzusetzen.
Ich freue mich wirklich darauf daraus was auszuprobieren.

'Power Food' hat zu Anfang eine tolle Zusammenstellung von Zutaten, alle möglichen Früchte, Gemüse, Nüsse und Getreidesorten, und welche positiven Attribute sie für deine Gesundheit und deine Ernährung haben.
Das Buch beinhaltet auch verschiedene Kombinationen von den drei Mahlzeiten am Tag, was ich super hilfreich finde.
Und weil ich so auf Süßes stehe, war ich natürlich besonders glücklich über diesen Teil über Backwaren und Desserts. 
Also habe ich mich für den Gluten-freien Beeren Mandel Kuchen entschieden.
Eine sehr gute Entscheidung.

Übrigens, ich kann dieses Rezept absolut empfehlen, auch die zwei Bücher.
Sie beinhalten viele verschiedene inspirierende Rezepte.
Sie sind auf einem einfachen Schwierigkeitsgrad gehalten, auch nach einem langen Tag auf der Arbeit.
Ich werde definitiv zukünftig mehr davon ausprobieren!


Gluten-freir Beeren Mandel Kuchen

Zeit 20 Minuten Vorbereitung plus 30 Minuten Backzeit
Ergibt ein Kuchen mit 24cm Durchmesser

150g Butter
150g Zucker
3 Eier, getrennt
150g Mandelmehl
1 Teelöffel Vanilleextrakt
Zitronenzeste, nach Geschmack
1/4 Teelöffel Himalaja Salz
150g gemischte Beeren

Heize den Ofen auf 175 Grad Celsius vor.
Rühre Butter und Zucker kremig.
Füge die Eigelbe eins nach dem anderen hinzu.
Mische das Mandelmehl, Vanille und Zitrone unter.
Schlage das Eiklar mit dem Salz zu Eischnee und hebe dieses vorsichtig unter die Mandelmasse.
Verteile die Hälfte der Masse in deine Backform.
Bestreue sie gleichmässig mit den Beeren, verstreiche daraufhin den Rest der Masse.
Backe für ca. 30 Minuten, oder bis ein eingeführtes Streichholz ohne Teigrückstände rausgezogen werden kann und die Oberfläche gebräunt ist.

Chocolate Muffins.


These muffins were definitely an experiment. 
A worthwhile one.
A tad more 'healthy' than your run-of-the-mill chocolate treats, they include whole-wheat flour, oats, cocoa powder, brown sugar and avocado.
They look super fancy, but are whisked together in no time. 
Go ahead, try them, I know you want to.

Chocolate Muffins

time 30 minutes plus 20 minutes baking time
yields 18-20 muffins

135g whole-wheat flour
200g all-purpose flour
50g quick-cooking oats
70g cocoa powder
1 Tbsp. baking powder
1/2 tsp. baking soda
150g brown sugar
50g sugar
3/4 tsp. salt
1 large avocado
270ml milk
100g yoghurt
1 tsp. vanilla extract
lemon zest to taste
2 eggs

50g 70% dark chocolate chopped into small squares
sea salt for garnish

Preheat oven to 180 degrees Celsius.
In a large bowl, whisk together the flours, oats, cocoa, baking soda and powder, salt and sugar.
In the bowl of a blender, process the avocado, milk and yogurt until smooth and creamy.
Pour into a small bowl and whisk in the eggs and zest.
Fold the wet ingredients into the dry until just combined (there should be no pockets of dry ingredients).
Fill a 12 muffin try with liners and fill each 3/4 way.
Top each with a square of chocolate and sea salt.
Pop in the oven for 18-20 minutes.



Diese Muffins waren definitiv ein Experiment.
Es hat sich aber gelohnt.
Ein wenig 'gesünder' als dein 0815-Keks, beinhalten sie Vollkorn Weizenmehl, Haferflocken, Kakaopulver, braunen Zucker und Avocado.
Sie sehen besonders aus, aber sind in null-komma-nichts zusammen gerührt.
Also los, probier sie mal, ich weiss doch dass du´s willst.

Schokoladen Muffins

Zeit 30 Minuten plus 20 Minuten Backzeit
Ergibt 18-20 Muffins

135g Weizenvollkornmehl
200g Mehl Typ 405
50g zarte Haferflocken
70g Kakaopulver
1 Eßlöffel Backpulver
1/2 Teelöffel Natron
150g braunen Zucker
50g Zucker
3/4 Teelöffel Salz
1 große Avocado
270ml Milch
100g Joghurt
1 Teelöffel Vanilleextrakt
Zitronenzeste, je nach Geschmack
2 Eier

50g 70% dunkle Schokolade, in kleine Quadrate geschnitten
Meersalz zum bestreuen

Heize den Ofen auf 180 Grad Celsius vor. 
Mische in einer großen Schüssel, die Mehle, Haferflocken, Kakao, Backpulver, Natron, Salz und Zucker zusammen. 
In einem Blender/Küchenmaschine, lasse die Avocado mit der Milch und dem Joghurt glatt und cremig laufen.
Mische sie zusammen mit den Eiern und Zeste.
Hebe die feuchten Zutaten den Trockenen unter, bis keine `Nester` von den Trockenzutaten übrig bleiben.
Fülle deine mit Papierförmchen ausgelegten Muffinförmchen 3/4 voll.
Drücke oben ein Stück Schokolade hinein und bestreue die Muffins leicht mit Meersalz.
Backe sie im Ofen für 18-20 Minuten.
