Semlor à la Poirier.

 

Semlor (the singular being semla) have been floating around blogs since Fat Tuesday. 
It's a traditional swedish specialty - a rich yeast bun filled with an almond cream filling.

I got a chance to try out this cool fruit concentrate from "Eat a rainbow", the PURPLE one made up of mainly of berries and grapes. 
It's 100% fruit and a great addition to yoghurts and all other kinds of foods, in my case the semlor filling. 

Mine don't have cardamom in the dough and boast a light and fruity buttercream filling instead the classic one. 
A twist, but a darn good one.
(And pretty purple!)

Semlor à la Poirier

dough:

350g flour
25g fresh yeast
75g butter
50g sugar
200ml milk
3g salt
1 tsp. vanilla extract

plus 1 egg for egg wash

filling:

300ml milk
65g sugar
40g egg yolks
20g cornstarch
20g butter
50ml "eat a rainbow - purple" fruit concentrate

150g butter, softened

Prepare the dough:
Combine flour, yeast, sugar, salt and vanilla in a mixing bowl.
Heat the milk with the butter until the milk has reached around 35-38 degrees, pour over the dry ingredients. 
Knead by hand or in the machine until the dough comes together and is not so sticky anymore. 
(Add a bit more flour if the dough remains sticky.)
Roll into a smooth ball and let rise for 15 minutes.
Punch the dough, reknead and roll into around 12 round balls, each weighing around 60g.
Place on a baking tray and let rise for around an hour, covering them up.
Preheat the oven to 200 degrees Celsius, bake the Semlor for 15-18 minutes or until a nice browned top is achieved.
Let cool.

In the meantime prepare the filling:
bring milk and sugar to a boil.
Beat the egg yolks and the cornstarch well.
When the milk has boiled, add a generous splash into the egg yolks, stirring constantly. 
Transfer the egg mix into the rest of the milk and bring to a boil again whilst stirring.
Remove from heat, stir in the butter, then the fruit concentrate.
Let cool.

Beat the butter until light and fluffy, then add the pudding one dollop at a time.
Beat until everything is incorporated and the buttercream is light and smooth.
Fill into a pastry bag fit with a star tip.

Cut the tops off of the Semlors, take out some of the fillling.
Fill them with the buttercream, put the tops back on and dust with powdered sugar.

Semlor (Singular ist Semla) geistern seit Faschingsdienstag auf etlichen Blogs herum.
Sie sind eine traditionelle schwedische Spezialität - ein reichhaltiges Hefegebäck gefüllt mit einer Mandelcremefüllung.

Ich hatte die Chance dieses coole Fruchtkonzentrat von "Eat a rainbow", die PURPLE (Lila) Edition zu testen, die zum Großteil aus Beeren und Trauben besteht.
Es sind 100% Frucht im Fläschen und es macht sich gut in Joghurt und anderen Lebensmitteln, bei mir präsentiert in der Semlor Füllung.

Meine Semlor haben kein Kardamom im Teig und statt der Sahnefüllung eine leichte und fruchige Buttercreme.
Eine kleine Variation, aber eine verdammt Gute.

Semlor à la Poirier

Teig:

350g Mehl
25g frische Hefe
75g Butter
50g Zucker
200ml Milch
3g Salz
1 Teelöffel Vanilleextrakt

plus 1 Ei zum Abstreichen

Füllung:

300ml Milch
65g Zucker
40g Eigelb
20g Weizenstärke
20g Butter
75ml "Eat a rainbow - purple" Fruchtkonzenrat

150g Butter, Zimmertemperatur

Für den Teig:
gebe Mehl, Hefe, Zucker, Salz und Vanille in eine Schüssel.
Erwärme die Milch mit der Butter bis diese 35-38 Grad erreicht hat, giesse sie über die Trockenzutaten.
Knete alles per Hand oder in der Maschine bis der Teig zusammen kommt und nicht mehr klebt.
(Füge etwas mehr Mehl hinzu falls das der Fall ist).
Knete den Teig zu einem glatten Ballen und lasse diesen 15 Minuten gehen.
Schlag die Luft aus dem Teig, knete ihn erneut und teile und rolle ihn anschliessend in 12 runde Ballen, jedes mit einem Gewicht von ca. 60g.
Platziere diese auf ein Backblech und lass sie für ca. 1 Stunde abgedeckt gehen.
Heize den Ofen auf 200 Grad Celsius vor, backe die Semlor für 15-18 Minuten oder bis die Oberfläche gut gebräunt ist.
Abkühlen lassen.

Bereite in der Zwischenzeit die Füllung vor:
lasse die Milch zusammen mit dem Zucker aufkochen.
Vermische das Eigelb gut mit dem Weizenpuder.
Wenn die Milch gekocht hat, füge unter rühren etwas der Milch in das Eigemisch hinzu.
Gebe nun alles unter rühren zur restlichen Milch und lasse alles zusammen aufkochen.
Vom Herd nehmen, Butter einrühren und dann das Fruchtkonzentrat.
Abkühlen lassen.

Schlage die Butter hell und schaumig auf, füge die Creme nach und nach hinzu.
Schlage alles auf bis die Buttercreme schön leicht und glatt ist.
Fülle es in einen Spritzbeutel der mit einer Sterntülle ausgestattet ist.

Schneide die Oberteile der Semlor ab, entferne etwas von dem Inneren.
Fülle sie mit der Buttercreme, platziere die Oberteile erneut darauf und staube sie mit Puderzucker ab.
