Twinkies.

Everybody who's ever been to the U.S. knows this classic.
But alas, Twinkies are no more.
Hostess Brands unfortunately stopped producing them last November.
So when my Mom told me that she found a supposedly good recipe online,
we tried it out.
And they were so yummy!
And so very close the original.

Twinkies

makes 8 small loaf cakes

150g sugar
135g flour
pinch of salt
1 tsp. baking powder
3 eggs
35ml milk

Filling:

50g butter, at room temperature
50g powdered sugar, sieved
100g Marshmallow Fluff
1/4 tsp. vanilla extract
1-2 Tbsp. milk

Preheat the oven to 175 degrees Celsius.
Mix together all dry ingredients.
Add eggs one at a time, stirring after each addition.
Add the milk and blend until the dough is smooth and pourable.
Pour into small loaf forms.
If you don't have any, you can use cupcake forms and make Twinkie cupcakes!
Bake for 20 minutes until the the Twinkies are ever so slightly browned.
Let cool.

Prepare the filling.
Beat the softened butter with the powdered sugar.
Add the Fluff and vanilla and beat until white in color.
If the filling is too stiff, add some of the milk.
Using a piping bag and a long tip, pipe the filling into the cooled loafs.
Enjoy!

Guten'!
