Peach Souffle. Pfirsich Soufflee.

 


It's the end of the season for wild peaches and this soft and velvety fruit tastes oh so yummy.
I have to admit I also invested in a peach puree (you can find it in well stocked stores / 1kg costs around 7-8 Euro / it freezes well), with it you can quickly whip up all kinds of great stuff.
Amongst others, you can make peach ice cream, peach pâte de fruit and of course this amazingly light and intense tasting peach souffle.

Peach Souffle

makes six 4-ounce ramekins

2 Tbsp. unsalted butter, for greasing
1 large wild peach
120ml peach puree
juice of half a lemon
1/2 tsp. vanilla extract
110g egg whites (3-4)
large pinch of fleur de sel
75g sugar
confectioner's sugar for sprinkling

Preheat the oven to 400 degrees. 
Generously butter six ramekins, set aside on a rimmed baking sheet.
In the work bowl of a food processor fitted with the metal blade, pulse the peach until coarsely chopped. (The pieces should be no large than1/4 inch in size.) 
Divide the peach between the ramekings, set aside.
    Add the lemon juice, vanilla extract, and a pinch of salt to the peach puree.
    Mix well and set aside. 
      In the bowl of a heavy-duty mixer fitted with the whisk, beat the egg whites with a pinch of the salt on medium speed until foamy. 
      Add about 1 tablespoon of the granulated sugar and beat on high speed until the whites hold soft peaks, 1 to 2 minutes. 
      Slowly add the remaining granulated sugar and beat on high speed until the whites are glossy and hold stiff peaks when the whisk is lifted.
        Add about a quarter of the beaten egg whites to the peach puree mixture and stir until well mixed. 
        Pour this mixture over the remaining egg whites and fold them together as lightly as possible.
          Spoon the mixture into the prepared souffles ramekins (the mixture should come up to the top of each). Smooth the top with a spatula. 
          Run your thumb around the inside of the rim of each dish, making a shallow channel around the edge of the batter. (This will help the souffles rise up straight and tall.) 
          Set the filled souffles ramekins on the rimmed baking sheet.
            Bake until puffed, golden, and gently set in the center, 8 to 10 minutes. 
            Remove from the oven, sprinkle with confectioners' sugar, and serve immediately.

            Es naht das Ende der (Wild-)Pfirsichzeit und diese samt-weiche Frucht schmeckt sooooo lecker. 
            Zugegebenermaßen habe ich zur Saison auch in ein Püree investiert (zu Finden im Großmarkt / 1kg kosten ca. 7-8 Euro / kann man super einfrieren), mit dem man vieles auf die schnelle zaubern kann. 
            Da wäre unter anderem Pfirsich Eis, Pfirsich Pâte de fruit oder auch dieses unglaublich lockere, geschmacksintensive Pfirsich Soufflee.

            Pfirsich Soufflee

            Für sechs Förmchen (150ml)

            2 Eßlöffel ungesalzene Butter für die Formen
            1 Wildpfirsich
            120g Pfirsichpüree oder 2 weiter Wildpirsiche
            15ml Zitronensaft
            ½ Teelöffel Vanille Extrakt
            110g Eiklar (ca. 3-4 Eiern)
            große Prise Salz
            75g Zucker
            Puderzucker zum Bestäuben

            Heize den Ofen auf 205 Grad Celsius vor.
            Fette die Förmchen und stelle diese auf ein Backblech bereit.
            Schneide den Wildpfirsich in kleine Stücke und verteile sie gleichmäßig auf die Förmchen. 
            Falls du kein fertiges Püree zur Hand hast, schneide deine weiteren Pfirsiche klein und pürier sie in einem Mixer oder mit einem Pürierstab (pass auf das es hinterher 120g sind!). 
            Mische den Zitronensaft und die Vanille hinzu und stelle das Püree beiseite.
            Schlage nun das Eiklar zusammen mit dem Salz und einem Esslöffel des Zuckers schaumig auf. 
            Gebe den restlichen Zucker hinzu und schlage alles zu einem steifen Eischnee.
            Rühre ¼ des Eischnees in das Püree ein. 
            Hebe nun das Püreegemisch vorsichtig in den restlichen Eischnee.
            Verteile die Masse auf deine Förmchen, streiche diese oben glatt und mach mit deiner Fingerspitze eine Kuhle am Rand (siehe Foto).
            Backe die Soufflees für 8-10 Minuten, oder bis die Oberfläche gold-braun geworden ist.
            Bestäube sie mit Puderzucker und serviere sie warm-lauwarm
